Almond Dofu

Almond Dofu is a refreshing and light Chinese dessert with a pleasant yet alarming texture of Jell-O and a cherry-like flavor of almonds.

The dessert’s mysterious opaque white glossiness and resemblance to tofu (though unlike tofu, dofu is not vegan) will have friends asking, “What is this?” Almond dofu comes in a boxed packet of powder, and the process of boiling and refrigerating is almost the same as Jell-O, except you add milk.

Next time you feel like slumming dessert, cut some almond dofu into cubes like you would for Jell-O, then combine it with some canned fruit cocktail. You can choose to drain or not drain the syrup, but I say a little extra sugar never hurt anyone.

Serve it prom-style in a punch bowl with ladle and you’ve got the staple of many an Asian church potluck.
