If you have never heard of bubble tea before, you are missing out on a delicious treat. Also known as pearl milk tea, the drink is made by adding chewy tapioca "pearls" to sweetened black or green tea, with optional milk or fruit-flavored syrup. The Taiwan-originated drink has been gaining popularity in U.S., but unfortunately, many places get the recipe completely wrong. Even in a big city like Chicago, Ten Ren Tea is the only place I've found that serves authentic bubble tea. A cup of iced passion fruit black tea with yummy tapioca, now that's my signal for summer.
